Tabouli, the Mediterranean dish :
What are the ingredients of this Mediterranean dish ?
Cracked wheat: the cracked wheat is the grain that is used in this Tabbouli recipe but you can use other grains in its place but it won’t be the traditional salad you would eat in Lebanon.
Parsley : parsley is one of the important ingredient in this Tabbouli salad recipe.
Tomatoes: you should use fresh, firm and ripe tomato in this salad recipe and also you can use cherry tomatoes.
Green onion: we use green onion in this salad for adding a nice flavor to the Tabbouli salad.
Mint : mint has a very good smell in this salad and it is one of my favorite parts of Tabbouli.
Dressing: the dressing is a light lemon dressing mixing lemon juice and extra virgin olive oil.
1 cup water
1 cup fine cracked wheat
1 cup minced fresh parsley leaves
1/2 cup minced fresh mint leaves
1/2 cup finely chopped yellow onion
2 cucumbers, seeded and diced
3 Tablespoons olive oil
3 Tablespoons lemon juice to taste
1 teaspoon sea salt
In a large mixing bowl, pour the water over the cracked wheat and cover it, let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped herbs and vegetables and toss with the mix. Combine the oil, lemon juice, and salt in a separate bowl. Add to wheat mixture and mix well .chill. Serve and enjoy.
Tahini sauce with Tabbouli salad:
1/4 cup tahini paste
1 teaspoon lime juice
1/2 teaspoon salt
3 tablespoons water
1 teaspoon cumin
In a bowl whisk the tahini with lime juice and salt. You will notice a change in texture and body of tahini paste.
Thin it over with water to your desired consistency, the 3 tablespoons water will make a thick sauce.
Whisk the water and add the cumin or more lime to your taste.
Then adjust thickness to your taste, add more water if you need to thin it out and add more tahini paste if you need to thicken it out.
Serve and enjoy
Avocado Tabbouli salad:
1 cup bulgur wheat
3 cups cucumber finely chopped
1 cup fresh mint finely chopped
1 cup chopped scallions
2 fresh Avocados, peeled, seeded
1 cup cherry tomatoes
Salt and pepper to taste
1/4 cup olive oil
1/4 teaspoon garlic powder
At first you should rinse the bulgur two times in a bowl and let the bulgur settle for a few seconds before pouring off the water.
Add some water to cover the bulgur and soak for 45 minutes or until it softened. Then pour off and squeeze out any excess water.
Stir in the cucumber, avocado, mint, scallions, olive oil, salt, garlic powder and pepper .and add the lemon juice to taste.
Add cherry tomatoes and let salad marinate in the refrigerator for 30 minutes.
To serve as lettuce cups you can pull the leaves from your lettuce and arrange the nicest, most cup-like leaves on a platter .fill each cup with a big spoonful of the Tabbouli and serve immediately.
